From the Sugarcane Fields of Mandya

Mandya is widely recognised as Karnataka's sugarcane-growing heartland, making Mandya Bella one of the region's most well-known food products. Organic Mandya Jaggery Square is prepared using sugarcane cultivated by farmers who follow and sustainable farming practices, preserving the authentic taste and heritage of this celebrated jaggery.

Freshly harvested sugarcane is crushed to extract its juice, which is then slowly boiled over a wood fire until it thickens. The concentrated syrup is poured into moulds (achchu) and allowed to set into solid jaggery blocks, giving Achchu Bella its distinctive square shape.

Unlike chemically processed jaggery, this method does not rely on artificial bleaching or whitening agents to achieve a lighter colour. The deep golden-brown colour reflects the authentic preparation process and the characteristics of unrefined sugarcane juice.

Made with a single ingredient, fresh sugarcane juice, Organic Mandya Jaggery Square delivers the rich flavour and aroma that have made Mandya Bella a trusted kitchen staple for generations.

FAQ

What is Achchu Bella?

Achchu Bella is the Kannada name for moulded jaggery. "Achchu" means mould, and "Bella" means jaggery. Fresh sugarcane juice is boiled and poured into moulds to form solid jaggery blocks.

Why is your jaggery darker than some other jaggery available in the market?

Prepared jaggery is typically dark golden-brown to deep brown. Organic Mandya Jaggery is not artificially bleached or chemically lightened, allowing it to retain its colour and flavour.

Is this jaggery made from sugarcane?

Yes. Organic Mandya Jaggery Square is prepared using sugarcane juice with no added colours or preservatives.

Is jaggery healthier than refined sugar?

Jaggery retains small amounts of minerals that remain after processing. However, it is still a form of sugar and should be consumed in moderation as part of a balanced diet.

Can I use jaggery instead of sugar in recipes?

Yes. Jaggery can be used in place of refined sugar in many recipes such as payasam, kheer, holige, laddus, chikki, beverages and several savoury dishes. Since it has a distinct caramel-like flavour, the taste of the final dish may vary slightly.

Why does jaggery become hard during storage?

Jaggery loses moisture over time, which can make it harder. This is a normal characteristic and does not affect its quality. Simply grate it or gently warm it before use if needed.

How should I store jaggery?

Store it in an airtight container in a cool, dry place away from moisture. Always use a clean, dry spoon or knife to maintain its quality.

What are the regional names of jaggery in India?

Jaggery is known as Bella (Kannada), Gur/Gud (Hindi), Vellam (Tamil), Bellam (Telugu), Sharkara (Malayalam), Gul (Marathi), Gol (Gujarati), and Gur (Bengali).
