Nachni Satva: Complete Guide for Indian Households

By Organic Mandya · Jun 23, 2026 · 5 Minutes

Nachni satva is the traditional Maharashtrian health drink made from sprouted and roasted ragi (finger millet, Eleusine coracana) flour - called nachni in Marathi. It is essentially the same preparation as ragi malt (Karnataka), ragi java (Karnataka), and ragi kanji (Tamil Nadu). According to the ICMR Indian Food Composition Tables 2017, ragi provides 344 mg calcium per 100 g (the highest of any cereal - 3x more than milk per gram), 7.3 g protein, 3.9 mg iron, and is naturally gluten-free. Nachni satva is one of India's oldest documented baby weaning foods, energy drinks for lactating mothers, and health tonics for elderly individuals - a single preparation that serves all age groups.

How to Make Nachni Satva (Traditional Recipe)

Ingredients (1 glass):

  • Nachni (ragi) flour (preferably sprouted): 2 tbsp (30 g)

  • Water: 1 cup (200 ml)

  • Milk (optional): 1/2 cup (100 ml)

  • Jaggery or sugar: 1-2 tsp (optional)

  • Cardamom powder: 1 pinch (optional)

Method:

Mix 2 tbsp nachni flour with 1/4 cup cold water to a smooth paste (no lumps).

Boil 3/4 cup of water (and milk if using) in a saucepan.

Add the nachni paste slowly to the boiling liquid, stirring continuously.

Cook on low flame for 5-7 minutes, stirring constantly until the mixture thickens to the desired consistency (thin for babies, medium for adults).

Remove from heat. Add jaggery and cardamom if desired.

Serve warm.

For babies (6+ months): Make a very thin consistency (use more water). Do not add sugar/jaggery before 10 months. Do not add honey before 12 months (botulism risk). See our [ragi for baby guide] for the complete infant feeding protocol.

Top 7 Benefits

1. Highest Calcium of Any Cereal Drink (103 mg per glass)

One glass of nachni satva from 30 g flour provides ~103 mg calcium - 10% of the daily RDA. For children, the elderly, lactating mothers, and anyone building bone density, this is one of the most accessible natural calcium drinks.

2. Gluten-Free and Easy to Digest

Ragi contains zero gluten. When cooked into satva (porridge form), the starch gelatinises into a smooth, easily digestible liquid - suitable for babies from 6 months, the elderly with weak digestion, and illness recovery.

3. Low GI (~52-54) for Sustained Energy

Unlike sugar-loaded commercial health drinks, nachni satva has a low-medium GI, providing steady energy release without blood sugar spikes.

4. Iron for Anaemia Support (1.2 mg per glass)

Complementary iron source. Pair with lemon juice or amla for Vitamin C-enhanced iron absorption.

5. Traditional Baby Weaning Food

Nachni satva has been the primary weaning food in Maharashtra and Karnataka for generations. Its smooth texture, mild flavour, and calcium density make it ideal for babies 6+ months.

6. Lactation Support

Traditional Maharashtrian and Karnataka practice feeds nachni satva to lactating mothers as a galactagogue (milk production stimulant) and calcium replenishment drink.

7. Elderly Nutrition

For elderly individuals with compromised chewing ability or appetite, nachni satva provides concentrated nutrition in liquid form - calcium, iron, and slow-release energy.
