How to prepare it (this matters with arbi)

Wash the corms well; the skin holds a lot of soil

Either oil your hands lightly before peeling raw, or boil the corms whole first and slip the skins off after, which is easier and avoids the itch entirely

Cook it THOROUGHLY. Undercooked arbi will scratch at the throat

Use something sour with it, tamarind, amchur, lemon or curd. This is the single best tip for arbi: the acid neutralises the compounds that cause itching, which is exactly why every traditional recipe includes it

A dusting of rice flour before frying gives the crisp shell that makes arbi fry so good.

It is creamier and denser than potato, so it holds its shape well in gravies

Slightly slimy when boiled; that is normal, and frying or the rice-flour coating handles it

Do NOT refrigerate raw colocasia. Like potatoes, it does not enjoy the cold

Keep it in a cool, dry, dark place with some air, and use within 4 to 5 days
