Sourcing

Organic Mandya Sambar Cucumber, also known as Mangalore cucumber or yellow cucumber, is a vegetable commonly used in South Indian kitchens. It is especially popular in Karnataka, Tamil Nadu, and Andhra Pradesh, where it plays an important role in everyday meals like sambar, kootu, and simple vegetable curries.

This cucumber variety is distinct from regular salad cucumbers. It has a pale yellow to light green outer skin and soft, slightly watery flesh inside. When cooked, it becomes tender and blends beautifully with lentils, spices, and tamarind-based gravies. Its mild, slightly sweet taste enhances dishes without overpowering them, making it ideal for balanced, home-style cooking.

In Indian kitchens, sambar cucumber is valued not just for taste but also for how easily it adapts to recipes. It cooks quickly, absorbs flavours well, and adds a soft texture to dishes like sambar and vegetable stews. It is often paired with staple ingredients like toor dal, curry leaves, mustard seeds, and rice-based meals.

Organic Mandya’s sambar cucumber is sourced directly from farms that follow responsible and cultivation practices. Each cucumber is selected for firmness, freshness, and suitability for cooking. This ensures that it performs consistently in daily recipes, whether you are preparing a quick weekday sambar or a slow-cooked weekend meal.

Because of its versatility, this vegetable fits easily into modern cooking routines. It can be used in both simple home meals and slightly elaborate dishes without requiring any special preparation techniques.

Farm Selection The cucumbers are sourced from farms that prioritise soil health and growing cycles. This ensures that the produce develops its flavour and texture.

Skin quality
Size and usability
Absence of damage or spoilage

Minimal Handling The produce is handled carefully to maintain freshness. There is no unnecessary processing, ensuring that you receive a vegetable that is close to its farm state.

How to Identify Good Quality Sambar Cucumber
